Unless you root and flash a different ROM, Sense is there, and sucks your RAM. The NA version of the S3, like the NA version of the X, uses the Qualcomm S4 Snapdragon (which currently is the only chipset with integrated LTE), and Samsung did the right thing in doubling the RAM in order not to hinder the use experience (this chipset requires 400MB for VRAM). The European versions don't have LTE and hence use Sammy's home grown Exynos quad-core. Same with the X, but they went with Tegra 3s instead.
The screen on the X is better, but not "much superior", that's hyperbole. For one, the blacks are better on the amoled; the advantage of the SuperLCD on the X is the whites are more true to life, and the colors a tad more natural.
