I don't have a comic to convert, but, to find the option you want, open the preferences, then in the "Conversion" section, click on "Input options". In column on the left, the input book types are listed. Select "Comic Input". On the right will be the options you can set. The second one says "Disable conversion of images to black and white". Changing it here will change the default used for any new conversion from a comic.

You will also be able to change this when you do a conversion. If you are converting from a comic, "Comic Input" will be listed in the left column and selecting it should present the same options.
