You need to change:
src="../Images/cover.
jpg"
to
src="../Images/cover.
jpeg"
In your Images folder you will see the image file is
cover.jpeg rather than cover.jpg. I'm not sure why but it's the norm rather than the exception in epubs. I've also seen covers with the png extention, although this is rare.
