I'm going to go ahead and give the answer because I need to get some work done and probably won't get to check answers anytime soon.
The animal is called a Gaur and is sometimes referred to as the India Bison. Those beans in the spoiler are called Guar and are also from India. If you ever go to India and someone asks what you would like for lunch --- be very careful.
