You lost your Documents folder because you deleted it.

As I explained in the other thread where you posted this (that you also linked to above), the kindle shares /mnt/us as the exported USB drive that you see as a drive letter in Windows. You deleted the contents of your USB drive. Do not delete stuff that you do not understand. You could easily have bricked your kindle by deleting any of the other folders.
