Generally you will be looking for/sideloading books in the ePUB format. Your easiest choices are either DRM free or with Adobe Adept flavour of DRM. The Touch manual is pretty good reading for folks who are new to this.
Other formats (for example Kindle books with their DRM) require removal of DRM (may or not be legal depending on where you live) and may require conversion to another format.
