Unless you specifically need a device with e-ink displays, I think your best bet is to get an an iOS device or possibly an Android tablet.

Japanese ebook readers such as Sharp GALAPAGOS, Biblio leaf, are mostly tied into Japanese domestic mobile broadband contracts. Unless you live in Japan, they won't be for you.

Kindle supports Japanese font display but Amazon.jp doesn't offer downloadable JP -language content. This means that you'll be looking at .pdf or other formats. (KIndle doesn't support xmdf) Support for .pdfs on Kindle as well as most other e-readers are poor and only possible for text as opposed to image based documents.

There's also no kanji or J>E dictionary look-up.

On iOS, PDFs display tolerably well and you'll have a number of dictionaries to choose from. They're however more expensive, have shorter battery life and you won't be doing much reading in bright sunlight.
