There is a modified reader app that you can install on a Sony T1 that allows you to control how many screen refreshes you get before the flash. You can adjust this to suit your needs. The T1 has page turn buttons as well as the touch screen.
Have you tried IR Touch on an eink screen? It is different then the touch you get on a tablet. The T1 uses a swipe to change pages, not a tap. So if you have a problem with a tap, you might find a swipe works better.
