I agree with a lot of the posts so far, but I can't resist hopping in with some favorites that haven't been listed yet:
The Neverending Story and Momo by Michael Ende
The Phantom Tollbooth by Norton Juster
The Girl Who Circumnavigated Fairyland in a Ship of Her Own Making by Catherynne M. Valente
Watership Down by Richard Adams
Hard-boiled Wonderland & The End of the World by Haruki Murakami
The Throne of Bones by Brian McNaughton (a collection of linked stories - so it may not technically fit the discussion, but nonetheless, excellent weird fantasy)
I also remember loving Faerie Tale by Raymond Feist, but I haven't read it in years, so I'm not sure that I would still like it.
