I wanna add "I Am Legend" by Richard Matheson to the list. It's not a zombie story (it's about vampires), but it was the inspiration behind Romero's "Night of the Living Dead," which along with the sequel "Dawn of the Dead" set the standards for pretty much every zombie movie that followed.
Plus it's jut a really entertaining book. And it's short! A novella really. Don't be turned off by its connection to that crappy Will Smith movie, the two share little more than a title.
