I lost sight of the "best" part somewhere along the way.

Also I tried not to repeat other peoples suggestions.
Of those listed I especially like The Last Unicorn by Peter Beagle, Lud-in-the-Mist by Helen Hope Mirrlees, Little, Big by John Crowley and perhaps The Well of the Unicorn, though it has been 30 years since I've read it.
