I couldn't find the first one in ebook format, like I said, I read my old German Legends I hardcover, but I have bought the second one in this anthology:
Legends II: New Short Novels by the Masters of Modern Fantasy, edited by Robert Silverberg. It's available in the Kindle store for 5.68 $. The whole thing looks good, I am sure I will enjoy most of the other stories, too, but for me it was worth the price for the Dunk & Egg story alone.

The third one was harder to find. It was published in the anthology Warriors, edited by George R. R. Martin and Gardner Dozois. Unfortunately, Amazon (both US and DE) only carry the hardcover. If you like audiobooks, there also is an Audible edition available. I finally found the ebook in the Kobo store, but it's rather pricey. I used my "welcome" coupon to buy it with 20 % off. Still, it's a huge book and most of the stories look interesting, so I don't regret it.

Hope that helps. I am afraid I am like you: I have a huge direwolf shaped hole in my TBR pile since I finished A Dance With Dragons. (Well, I hope I remember well and it was actually you who said this.)
