Kindle Fire, Kindle for Mac/PC and Kindle Touch currently read KF8, I beleive. The Kindle non-touch should get a firmware upgrade to read it at some point, and if we're really lucky, so will the Kindle 3 Keyboard.
Like the earlier Kindle formats, KF8 is wrapped in a Palm database, so it's not possible to hand-craft one without using a compiler, either KindleGen or (the latest) calibre.
Using KindleGen will get you a combined Mobi/KF8 file that can be read by any Kindle. Older Kindles will read the mobi part, newer ones the KF8.
