I've figured out how to do it using just 5 locks--

Employee 1 has K1, K2, K5
Employee 2 has K2, K1, K4
Employee 3 has K3, K2
Employee 4 has K4, K3

Edit: Employee 1 & 4 could open the vault, so never mind.
