I don't know about enterprising. There are hundreds of recipes out there. I just followed the one Alton Brown gave on Good Eats. (episode: "A Pie in Every Pocket")
But man, once you make your own you'll never want to go back to that store-bought junk. The filling is fresh and the crust so flavorful. The only downside is that they're only shelf stable for about a week (though you can always freeze the uncooked pastries).
