You can't force the Kindle to display the real cover when the book is initially opened. The cover is stored separately from the body of the book.

What you can do is to insert a second copy of the cover art as the first item in the body of the book followed by the title page. If you build the source file(s) properly the book with open displaying that second copy of the cover art. If you do this you might consider using a slightly different version of the cover art that omits any "extra" promotional blurbs, etc. leaving the reader with an unobscured view of the art.
