I don't know if this is the method you're thinking of, but this works on a Kindle Keyboard and I suppose it can be done on the other models too. You create a collection (Menu|Create New Collection) and open it. If it's an empty collection, there's an option there to add books to it ("click to add items to this collection"); otherwise, with the collection open, press Menu and then Add/Remove Items. You can then check off each book you want to add to the collection and press Done.
