You can run scripts in the background. Write some script which detaches itself from the shell, and it'll happily run in the background.
Point is that you have no way of returning to an opened GUI window short of closing those opened after it... There's no window switching functionality.
(At least not for those opened in fullscreen mode... didn't try with multiple small windows yet
)
