What I'm most impressed by on the iPad 3 - and this is something I didn't even know existed until I got mine - is its ability to reliably convert continuous speech into text. I thought it was a bit of a joke at first, but I'm finding myself using it more and more, because it works so well! I'm guessing that it uses the same technology that "Siri" uses on the iPhone 4S.
