You can order the columns under (put title after author etc.) under prefences>behavior>add your own columns.

I think the sorting has been covered already, but there is a tweak for alphabetic sort or library sort Preferences>tweaks

I think there is a tweak for how calibre sorts on startup as well.

The view manager plugin allows you to set up custom views.

The quality check plugin will tell you if your author_sort or title_sort are wrong.

To get consistent sorting it is very important to have your author_sort consistent as this is what calibre uses to sort (by default anyway) the author column. Probably title_sort for title column. I was quite confuse by this at one time.

The metadata to contend with is color coded pink in the edit individual metadata dialogue (for me anyway it is pink for bad, green for good).
