I have pretty eclectic tastes (though I also prefer some melody with my rhythm, most of the time). To some of the gems already discussed, I'd add Libana, Loreena McKennitt (particularly the album The Mask and the Mirror), Michael Hedges, etc.

My favorite Vivaldi piece is the Gloria, of which I know most of the alto part by heart.
