Pottermore will only send the books to B&N and Sony from the US and Canada so if your gift Pottermore account has the country set as UK you won't be able to use that option. Canadians are geo-restricted to the UK version of the books, so that's the same as using the UK as your country for the gift account. You didn't have problems sending from a UK Pottermore account to your Amazon Kindle account since the Kindle link works for most countries, but I assume you would have a problem linking to a B&N or Sony account from that UK account, whereas you'd be fine linking from one where your country was set as Canada.
