Least expensive way to get a Mac in the kitchen is to go with a Mac mini and a separate screen of whatever size you want. Have a frame made for the monitor and paint it to match the kitchen decor. Next step up is a wall-mounted iMac. Best way to get a new model is through Amazon. They offer a $50 to $100 discount off regular prices plus no shipping or taxes. Second way is to buy refurbished directly from the Apple online store. Prices vary but will be charged taxes. themacstore.com sells preowned models. You don't even have to select the newest version if you choose pre-owned, previous should be fine. Avoid all power pc models as they are no longer supported. Also, be aware that there is a current OS upgrade in the works with a projected release of 'summer '12' that is rumored to not work on the intel core duo machines, though core 2 duo are supposed to be fine.
