same issue with mine, a restart is pointless now because of the way iOS 5 works, the status of all apps opened is remembered, so doing a restart brings you back to exactly how it was before the restart, apps crashing is usually when it runs out of ram and the os has not auto closed unused apps

the only way I can stop the apps crashing is to occasionally double tap the home button to bring up the list of apps used in a line at the bottom, press and hold one one of them till the '-' thing appears and then hit the minus against all apps, this will close these apps down fully
