Since upgrading to version 0.5.3 I get a Times New Roman font for rendering the text...
Sorry I can't confirm this, on my System the default is still Sans-Serif. AFAIK theres no way to control the default Font, sigil uses if no other directive is given.

Put

in your stylesheet.
