Select Tweak ebook (select ebook and look in right click memu), and edit the images with something like Ifranview (for Windows) where the flip vertically shortcut is V. Since the image size isn't changed there should be no need to edit the HTML.

This is the same as AnemicOak's suggestion, except that Tweak ePub does the ZIP stuff for you.
