Ok good answers... we use Cingular here, and from what I can tell, out units are left untouched from Nokia directly (we can change background images, edit menu items, etc.) ourselves.
I don't know about switching providers so I can't speak to that point, but I doubt I'd want to move away from Cingular to any other (US-bound) provider. When going overseas of course, I might want to.
