Yes, there's clearly 2 routes to go here: going with what's available out-of-the-box or hacking/jailbreaking. I can definitely see the argument for the latter for arthritic/disabled users as the people who make these things certainly don't cater for their needs. If I was more tech savvy and prepared to do take on the constant support that I believe would go with that, then I'd consider it. Sadly, the answer's no to both of those so it looks like I'm going to go the out-of-the-box route, which is probably a massive cop-out but "a man's got to know his limitations".
