My favorite way, even for a SINGLE book, is to choose "Edit Metadata in Bulk". You will see Today's date written at the bottom and simply click the checkbox "Apply Date" (assuming "today" is the day you want to use for date added).

Using "In Bulk" is something I do carefully, because if you check the wrong things you can mess up your Library info, but There are sometimes when I like to apply the current date to a bunch of books that didn't for whatever reason, have "today" as the date when it was imported to calibre.
