I'm afraid you will have to go into those menus you hate and adjust how Moonreader behaves.
Did you buy the Pro version or download the free version? Pro has the text to speech (TTS) function, as I understand it, whereas the free version (which I have, being cheap and not caring about being read to) doesn't.
