As Ben says, there are new actions in the latest version (CB). So yes, you can. More or less.

My setup for example is like that:
  • Open book: touch as always
  • Close book: touch on right upper corner of the book once
  • Paging: swipe as always; forward additionally tab once on right lower corner
  • Change font size of book: make one upward swipe in the book. This calls the zoom dialog
  • Change CSS-file for fine grained font size altering: tab one in the lower left corner
  • Zoom-In with panning funcion: tab once on the upper left corner. Alter zoom-level with double-tab or single tab. Leave zoom mode with X.
  • Goto sleep mode: make one downward swipe in a book

What is missing? Option-mode for books.
So I could alter PRS+-setup to do this say instead of the CSS-changing.
