Strange, then it should already have a embedded chines-font, and probable another problem will arise: the book might use DRM. Which needs to be removed before using any of the font-tweaks.
You will have to install CustomFirmWare, PRS+ (or any of the russification-packs)

Don't call it
style.css as this will be overwritten every time.
Call it >myChines.css< or something like that.
You can have as many *.CSS files in this folder.
The PRS+ function "custom EPUB style" lets you choose out of these files, and will copy it over style.css, which is the only one recognised by patched ADE-viewer binary.

It should already be pre-formated like that, which makes me wonder again, why no foreign font is included/used.
Practicaly it would depend on the CSS styles used in this particular epub.
So your best chance is to remove DRM (if any) open up in Sigil (huge forum here at MR) and check the styles
