CoolReader supports Chinese ebooks, if you select one of the default Chinese fonts. However, since the Kindle 3 supports Chinese out of the box you don't have to install CoolReader, unless you have lots of Chinese ePubs.
If you're primarily interested in Chinese, Duokan 2012 would be the better option anyway, because it comes with an English-Chinese StarDict dictionary and several IMEs.

AFAIK, so far only Duokan Lite/2012 contains a (poorly implemented and buggy) StarDict version.

AFAIK, there's no dictionary support in CoolReader and it's not very likely that this feature will be added anytime soon. The same goes for PDF support, which is also better handled by Duokan 2012 in spite of the current bugs.
