If your KF has the latest software update, it should give you THREE options when you long-press the book cover in the carousel: Remove from Device, Add to Favorites, or Remove from Carousel. If you just want to get it out of the carousel, choose that one. If you want to take it off of the KF and put it back in the cloud while leaving it on the carousel with your other archived books, click to remove it from device. (You can re-download it any time you have a wifi connection if you want to.) Or you can put it in the Favorites bar if you want to have it available quickly.
