A couple of my favorites are also some of the first sci-fi I ever read, in a slim anthology I got through the RIF program in school:

Betelguese Bridge by William Tenn
A Bowl of Biskies Makes a Growing Boy by Raymond F. Jones

Another of which I'm probably overly fond is Harlan Ellison's "Repent, Harlequin!" Said the Ticktockman.

Also, you could class it as sci-fi, fantasy, or general/literary, but I'll give honorable mention to Michael Bishop's The Mark 16 Hands On Assembly of Jesus Risen, Formerly Snake-o-rama.
