In the newspaper/magazine business, that's the difference between "black" and "three-color black". "Black" is done with black ink. "Three color black" is done with cyan, magenta, and yellow ink. It's more a muddy brownish-gray. Expensive presses have a 4-color process that includes black ink as well. Really expensive presses can use up to 6 (IIRC) colors to make really, really nice printing.
eInk is like printing, hence the washed out blacks on the jetBook Color.
