I would assume they're serious about the limit because they're not feeding in page after page -- presumably there's a feed loader where they slap the book in and it has a size limit of 2.5 inches. It's possible they could cut it in half, but you'd better ask them.
As for trimming the margins, that would be a huge hassle for them. I doubt they have the equipment for it. It'd be easier for you to do it on the scans themselves: "Quick PDF Tools" allows you to convert with a single click 1 PDF into a directory of images and "Irfanview" image software allows you to batch crop/trim images, like, say, take 50 pixels off the bottom and 100 pixels off the top.
