How to make iTunes not overwrite my iPod's Stanza on sync?

I've got an iPod Touch 1st-gen with iOS 3.1 on it, and an iPad with OS 5.1. Stanza, of course, updated on the iPad, which in turn synced the updated 3.2 version onto my iTunes, which in turn overwrote it onto my iPod. yay.

I managed to get ahold of and reinstall Stanza 3.1, but my problem is whenever I sync it to iTunes, iTunes oh-so-helpfully notices it's out of date and overwrites it with 3.2.

Is there a way to tell my iTunes not to put updated apps, or at least not to put that updated app, on my device?
