I don't know if it's the same on the Mac, but Kindle for PC has a dedicated folder for its books, called My Kindle Content (in the case of Windows XP it's below My Documents by default). The books have their original extension (AZW in the case of titles purchased from Amazon), but most of them have cryptic filenames, like B002RI9Q3A_EBOK.azw. You would have to load a file into Calibre, or some similar utility, to see the title, etc.
