My Kindle has a 2G SD card in it -- which formerly was in my digital camera until I upgraded the camera to an 8G card. It's about 3% utilized or some such silly nonsense like that. I only have the books I'm likely to read in the next couple of weeks loaded into the Kindle (including the SD card). In my backpack, I carry a USB "thumb" drive with practically everything I've ever downloaded on it, so I can push other books onto the device whenever I want.
When my sister got her Kindle, I purchased a 1G SD card for her (at under $15.00) and put 350 files on it (including all 50 of the Harvard Classics) which only took up 150 Meg of the card's storage.
Books of text don't take much space, even if they're a pretty long book. Illustrated books (such as the Beatrix Potter ones) are *HUGE*.
