Great List:

Here's my most frequently used:
1Mobile Market (for access to additional free apps)
AccuWeather (better than Weather Channel IMO)
Adobe Reader
CalenGoo
Email (the included app)
DropBox (sideloaded)
ES File Explorer
ESPN ScoreCenter
Exchange by Touchdown (for my work email)
List Master Pro
Netflix
Opera Mobile
QuickOffice Pro (Love it's integration to lots of online file services)
StumbleUpon (great way to kill some time)

Games:
SimCity Deluxe (picked it up for $0.10)
Plants v. Zombies (not the Fire version, I had the regular version from a free app day)
Gin Rummy (I prefer card games.)
Angry Birds (again regular versions - for the kids mainly)

Playing with but not frequently used yet:
Allrecipes.com
Chef's Kitchen Timer (allows for multiple timers)
Comics (reading one series at the moment)
EasyRSS (RSS reader that integrates with Google Reader)
ReadItLater
MapQuest
Office Calculator
Photoshop Express
Zinio

I really want a better email app for GMail, something that threads the messages like GMail does. Enhanced Email didn't do it for me so, I just went back to the basic email client. I also tried MailDroid and had too many issues with it. I probably need a better RSS reader but just haven't spent the time to try some out. I am also interested in finding a PDF reader that allows annotation, but it hasn't been a huge priority. Long ago I had a work issued iPad 1 (I've since changed jobs), and there it was great, but here I'm a bit concerned about annotating on the small screen. Between sideloading and the Amazon app store, I've been totally satisfied with finding apps.
