They know everything you buy or email to your account, obviously. Deleting it from your account means nothing. They no doubt keep a separate record of your transactions. Could be a good thing in case of accidental deletion.
They *could* know what you put on your kindle via USB, if you ever turn on the wireless. Do they care or *want* to? Probably not.
Could someone else, like a government, rights holder, or a litigant, be interested in your info and want Amazon to hand it over? That seems to me the more likely scenario. Will Amazon go to bat for you and refuse to hand it over? That has yet to be tested.
(The most likely scenario is someone gets into your amazon account by for example figuring out your password and do all kinds of mischief. This is the danger with all online accounts)
Don't put stuff on there that you really want no one to know you have. Of course you have to balance with this consideration: is it any more secure sitting on your own computer?
