Most certainly. I have a friend at work. She was absolutely opposed to getting an ereader. She said she enjoyed the paper books. I told her she could save tons of space (she had a few shelves full of hundreds of paperbacks) she still didnt care.
Well this holiday season changed her mind.

Just like DVD players and HDTV's. It took a few years for people to convert over. Now ereaders and tablets are where DVD players and Hdtv's were 5 or 6years ago. The new hot item for the holidays.

Though I dont think eink will have as much popularity as tablets. The big reason??? People just dont read as much as watch videos and play games. Passive readers will get the eink readers and either return them for a tablet or use them very little. Although there has also been a trend where passive readers became obssessive readers because they were reading on a cool little device.

So the popularity of eink readers could wane a little after this year or next with the advent of the new hot item.(though I cant see what that will be right now, maybe 3d tvs or cell phones.)
