You
can remove a highlight from just tapping on it. Or at least, I can; just tap, the menu pops up and I hit delete on the far right - see my screenshot. Is that what you mean? I'm using the latest version from the market 1.6.4. Maybe you're using a different version?
What I have noticed is that the selection handles can jump around quite a bit while selecting words to highlight.
