If you have a DRM-free book, you can load it into the Windows MobiPocket reader and copy text from that into another application.

There's no way (that I'm aware of) to copy or print text from a DRM-protected Kindle book. I suppose you could photograph the screen and use an OCR application to extract the text, if you REALLY wanted to do it .
