Depends on the format and what you do with the pages after OCR. Generally I take my OCR pages into an editor such as word with a group of pages in one file. Once I have reviewed them and made changes then I use that file to convert to the eBook format of choice. For ePub I generally save the page as an HTML file and import it into Sigil. Most often I create a word document per chapter but Sigil doesn't require that. There are lots of choices in how you work. You might want to use our wiki for more information. There are pages on OCR on making eBooks (see HowTo) and pages specifically for authors.
