Why do you want to change it? i.e. What are you trying to do? There might be a better way to accomplish it.
Typically you should manage all your books from within calibre and not look into the directory it uses to manage its database. You can always export books from calibre into a new directory structure with the directory and file names exactly as you want - using Preferences->Save to Disk and Save to Disk.
