Sorry for the late reply. I went to a book reading last night and didn't see your post until today.

There's a software product called DVDCatalyst 4. It's like iTunes for movies except unlike iTunes you have to buy your DVDs somewhere else. You put your DVD into the PC's drive (it's Windows only), tell it the device you want to convert to (the Nook Color is listed under "Android") and it converts the video file so it works perfectly on the little 7-inch screen.

I don't know if it can capture YouTube videos or broadcast TV but if it won't, I've heard there are tools somewhere on the Internet to record them. There are a lot of formats it can convert. It will even convert down to an iPhone sized screen. It's easier to use for file conversion than Apple's Handbrake, which was beyond my technical ability. I always got the screen size codes wrong and my output files were like looking into the mirrors in a sideshow.
