Epub is the most common ebook format - everything but Kindle will read Epub. And you're more likely to find Epub's than Kindle formats while torrenting.
But you're also likely to run into a lot of PDF's while torrenting. Most ereaders will read PDF's, but depending on how they're laid out, they can be a pain in the butt to read on an ereader. You can try to convert them to Epub, and sometimes it'll work and sometimes it'll look even worse. It's hit or miss. PDF's are the worst format to try to convert.
So, if you're set on torrenting without having to mess with conversion too much, I'd advise you get an ereader that reads Epub (like the Kobo) and avoid PDF's.
