I agree. The most likely scenario is a new (and cheaper) NOOK Color to compete with the Kindle Fire. Improved specs are a must, and probably an improved interface and ecosystem as well.
As for other eInk models... it's possible, of course, specially since Amazon now offers a Kindle for under $100. But I would rather B&N did not. Amazon has the money to invest in multiple devices, B&N doesn't. I think they need to stick to making a limited number of devices. There is no need to go after every niche and sub-niche out there. Leave the 5" and 9.7" to others.
Just stick to making the Nook STR and Nook Color as good as possible, give customers as refined and cohesive and pleasurable experience as you can on those two devices, and that's good enough. The rest of the market can go to hell.
Let's face it: it's not like the Kindle DXes of the industry are setting the world on fire.
